Spoiled Muffins and Itchy bums

I’m standing in line yesterday at the local big bank, and what do I see in front of me? A guy at the teller right next to the screen that tells you which teller is available, not just a guy, a guy itching his butt! EWWW! There were at least 8 people behind me in line and 1 in front of me yet, so I’m sure some of them saw it. Then what does he do? Picks up the pen, signs his name. Guess who got that same teller and had to sign her name? And some people think I’m anal about my hand sanitizer.

I could have posted a real nasty photo but I thought I'd get too many nasty hits to my blog. Maybe the guy at the bank should have leaned against the counter and rubbed his butt instead!

I phoned a friend of mine yesterday to ask her why her cookies never seem to spread, or at least the ones I’ve eaten. She asked if I follow the recipe, Yes, I do. She asked a bunch of other questions. In the end we chopped it up adding more flour the next time or my oven and that maybe it’s not hot enough when I put them in. Do any of you readers know why cookies spread?

The other day, I was getting company after supper and wanted to provide an evening snack with tea. I decided to use up those black bananas on my sill and make banana chip muffins. Jade’s favorite. I mixed them up, put them in a muffin tin and baked them. The smell was tantalizing and homey after awhile, so I peeked in the oven to check on them and they hadn’t risen. In fact, they looked unbaked. So why could I smell them and they looked unbaked? I poked one, yep, hot and hard. Yours truly neglected the baking soda. I was so angry at myself. Only twice has this ever happened to me. And why oh why does it only happen when you cook or bake for company?

Here’s my recipe for Banana Chocolate Chip Muffins:
(don’t forget the baking soda…:) )

Banana Chocolate Chip Muffins


1 large egg
1/4 cup cooking oil

¼ cup milk

3 mashed ripe bananas or 1 cup

1 ¾ flour

½ cup granulated sugar

1 tbsp baking powder

1/2 tsp salt

½ cups or less chocolate chips

Preheat the oven to 200°C (gas mk 6, 400°F). Place the egg, oil, mashed bananas and milk in a large mixing bowl and beat together.

In another bowl place the flour, sugar, salt, baking powder and chocolate chips and mix. Pour in the liquid into the dry mix and stir until just blended.

This recipe makes approximately 12 muffins.

This is one of the funniest post I've ever read! I can just picture the teller man scratching his butt with not a care in the world. Hilarious! Thanks for the laugh. I swear, I feel like I've watched an episode of Oprah every time I read your blog. Always a new recipe or handy tip....good new stuff.

Perhaps you should have gone to the "butt guy" and offered HIM some sanitizer!!

I know how you feel about baking going bad for company - remember Easter?? You're not alone!
