Getting out of my Supper Slump
I've been in my usual "What-to-make-for-supper" slump and thought that today would be a good day to make Lasagna. We are meeting someone at 5:30pm in Kleefeld and tonight is a big TV night, so I'd like something to make and forget.
However, that could change once I go to my kitchen and find out I really don’t have half the ingredients I need. But that’s the plan for right now. :)
Ahh but what kind of Lasagna should we have? I have been really tired of the tomato based stuff the last year or so. It gives me heartburn, it gives Julia heartburn (sometimes) and just a general ick feeling. So we tend not to lean towards that way. So, I head to my faithful Cassie (computer) and ask her what she thinks is a good alternative. As I am typing this I am even thinking even easier, Crock-pot Lasagna! Never tried it, but maybe today would be a good day to.
So, I’ve searched. Remember, I did mention that it may not be Lasagna…It’s not. It has now changed to Sweet and Sour Crock-pot Meatballs. The sauce being made of grape jelly, ketchup and lemon juice. Easy enough. Or so it seems. I am so not into numerous ingredients. To me, less is more. I don’t want to slave away on one thing, just for it to turn out crappy. I don’t want to spend extra money in the grocery store on items I will only use once or twice. So, I’m sticking with easy peasy.
I’ll let you know how it turns out.
Until then….Happy Cooking!
